Wild Canon: Honey-Roast Whole Squirrel with Apple & Chestnut Stuffing.

Honey-Roast Whole Squirrel with Apple & Chestnut Stuffing.

Cooked to your requirements, covered in a Brandy & Sour Cream Sauce, with pan-fried fresh-picked Mushrooms. Served on a bed of fluffy Mashed Potato or Rice and with either lightly cooked Vegetables or Crispy Salad.

To accompany it, a bottle of delicious Chavalier de Bayard full-bodied Red Wine.

For the vegetarian alternative, replace the squirrel with its drey!!!

Means some tree climbing, and a bit chewy.

I must say, if all the recipes sound as delicious as this, it will be virtually impossible to determine a winner Icon_biggrin !
