Tree Rat-a-touille

Tree Rat-a-touille in the Oven

Serves: 4
Preparation Time: 10 mins
Cooking Time: 30 mins (oven)

Ingredients
2 red onions, quartered
2 red or yellow peppers, deseeded and cut into chunks
1 aubergine, chopped
3 courgettes cut into thick slices
3 tblsp. olive oil
2 cloves garlic, crushed
2 tblsp. chopped oregano or thyme
400g tin chopped tomatoes

Method
1. Put all the vegetables except the tomatoes in a large roasting tin, pour over the oil and stir through the garlic and herbs.

2. Season with sea salt and black pepper.

3. Roast at Gas 6, 200 C for 30 minutes.

4. Stir in the tomatoes and roast for ten more minutes until hot.

Serve with barbequed Squirrel.

Being vegie, not sure how you barbeque anything really so I'll defer to the experienced meat eaters amongst you for suggestions!!!
