INGREDIENTS
1 Large onion, finely diced.
2 fat cloves of garlic, crushed
Tablespoon of extra virgin olive oil
4 Haunches of squirrie.
METHOD
Cook onion and garlic on very low heat until transparent, then add the 4 haunches of squirrie and cook slowly for 3/4 hour or untill meat falls off
the bones.
SAUCE
Take 4 pint cans of Guinness, a bottle of good red wine ( at least £2.99) 1/2 bottle of Irish wiskey ( Jamesons is good) and for garnish a large glass of Baileys Irish Cream.
Add all liquid apart from Baileys to a seperate saucepan, warm gently, DO NOT BOIL!!!
PRESENTATION
Strain off meat, discard bones safely, give squirrie meat to dog, cat, passing tramp etc.
To gravy, add glass of Baileys, please remember to make a spiral pattern, it looks better, trust me.
Then sit and enjoy,you can lose a full evening with this recipe !!!
